End of Day 3 On The Road

877+ miles covered- about 1400+ to go! Tiring day.
Up at 6:30 am today because we realized the power went off- which meant, our batteries were depleted. So Gerry had to boost the generator from the SUV to give us power again.
Then gas, and on the road at 9:30 am to Bismark. Made a stop there, had lunch in RV and then we were on the road again.
Thought we'd go see the Sitting Bull Memorial but GPS took us on some crazy farm road and we were stuck in back country and dirt roads for about half hour. Decided we were not going to waste anymore time and that we would just pass it by, and made way back to the highway, and onward to our stop for the night- Pierre, South Dakota.
North Dakota was so insanely boring- so much farm, farm and more farm! 
We did see miles and miles of corn and sunflower fields ready to be harvested and pheasant hunters with their dogs.
And South Dakota has also so far up to this point been unexciting.
Sorry to the folks living in these states but what we've driven through so far, we don't want to have to come this way again...just nothing to see...

October is National Apple Month

This month is National Apple Month and our friends at Krusteaz have some great recipes to share, that include APPLES- 

                                 Caramel Apple Crumb Cake

Prep

Prep Time: 15 min Total Time: 1 hr Servings: 1 9-inch cake

Ingredients

1 package Krusteaz Cinnamon Swirl Crumb Cake & Muffin Mix
1 package cinnamon topping (cinnamon topping enclosed)
1/2 cup water
1/2 cup Greek yogurt
1 large egg
1/4 cup caramel sauce + more to serve
2 medium apples, cored and chopped
1 teaspoon ground cinnamon

Instructions

Preheat oven to 350°F. Grease a 9-inch spring form pan with baking spray. Line with parchment and grease parchment. Set aside. In a small bowl, whisk together water, yogurt and egg. In a separate large bowl, combine the cake mix with half of the cinnamon topping. Add water, yogurt and egg; stir.

Spread batter evenly into prepared pan. Drizzle the caramel sauce over the batter and using a knife swirl the caramel sauce into the batter. Toss chopped apples with ground cinnamon. Sprinkle apples over batter along with remaining cinnamon topping. Bake cake for 35-40 minutes or until a toothpick inserted into the center comes out clean. Let cake cool for at least 15 minutes in pan before removing. Serve warm with a drizzle of caramel sauce.

                                Apple Pie Pancake Rolls

Prep Time: 5 min Total Time: 30 min Servings: 10

Ingredients

1 cup Krusteaz Buttermilk Pancake Mix
1 cup apple juice or apple cider
1/2 teaspoon cinnamon
1 can (21 ounces) apple pie filling

Instructions

Whisk pancake mix, apple juice or cider, and cinnamon in a large bowl until smooth. Batter will be thin. Let sit while pan is preheating. Preheat a small frying pan over medium-low heat. Spray with nonstick cooking spray. Place about 2 tablespoons of batter into pan and swirl the pan to make a thin pancake that’s about 5” in diameter.

Cook about 45-60 seconds then carefully flip and cook for an additional 30 seconds, until the bottom is browned. (To easily flip the pancake make sure you’ve sprayed the pan with nonstick cooking spray. Use a spatula to lift up the edges. Work the spatula under one part of the pancake and then flip it.) Warm the apple pie filling, if desired.

Place 3-4 apples from the apple pie filling in the center of each pancake and roll up. Dust with powdered sugar and serve warm.

Another Change in Product Sizing

We had always bought Dairyland chocolate milk when it was on sale at Walmart for $1. It was as far as we had known, always 1 litre size. Now we have noticed the carton size "looks" the same, but inside contents are less.

Eventful Week

I've had to think a few times about what to write over the last few days, as it's been an eventful week. We're back home though- for now.

My dad ended up in the local hospital last week with Sepsis, which possibly led to kidney issues, which led to him having to be flown out of town and to the city, where he awaits a kidney biopsy on Monday. While all this was happening and while he was still in our hometown, we were getting ready to go on our trip south, which we did. But we returned. We hadn't at the time heard he was flown out, but while we were away we had mechanical problems with our SUV about 6 hours out of here. Problems that came out of nowhere. We decided we would come back home and look after them here.

Once home we had furnace issues, which were kind of there possibly before we left, but we noticed more so when we returned home and it took 6 hours to warm the house. We called in someone and found out that we need a new chimney, as our old one was rusted away and causing the pilot light to go out in our propane furnace. New one getting installed Monday- $800+

The problem with the SUV turned out to be a rock that popped out of the fan once we got home. But to be on the safe side- we are having a diagnostic test done here on Tuesday.

While home, Gerry will be helping my mom with things around their place and winterizing there, while my dad is away. We are hoping things will improve for my dad and still hope to go away next week, but will see what time brings us.
