4 skinless Chicken breasts
2 oranges
2tablespoons flour
Salt & pepper
1cp chicken broth (reduced)
1tblsp Canola Oil
1cup white wine
½ cup golden raisins
2tblsp honey
1 cinnamon stick
½ cup almond slivers
You will need to zest and juice both oranges carefully removing the peel and pith before juicing. Halve and slice the oranges, set aside juice and zest.
Combine the dry ingredients in a dish dredge the chicken and shake off any excess flour mixture. The remaining flour will be used to make the glaze combine the broth and the flour and whisk until smooth.
Heat the oil in a large non-stick pan and cook the chicken turn in to make sure each side gets golden brown. Transfer the chicken to a platter. Add the white wine to the and let the alcohol cook away now add the rest of the ingredients to the pan, the zest, juice, raisins, honey and cinnamon stick along with a pinch of salt
Reduce heat and chicken and let simmer at 165degrees for 10-15 minutes. Serve with light salad, dinner roll and your favorite wine.
